Caramel Cheesecake

my first time to bake a cheesecake - caramel cheesecake to be exact. after all the troubles in our oven, i had to transfer the cheesecake to my bro-in-law's oven to continue baking. it was a 25 minute drive to his place. the original oven temperature was set to 165C but i had to reduce it (using my in-law's oven) to 120C coz i didn't want the whole cheesecake to be overcooked. the actual side of the cheesecake was already cooked before i transferred it to my in-law's oven. the problem was the centre part - it was raw and still gooey. after less than 2 hours of checking the middle part, it finally got cooked. i did some test by poking the middle part using a bbq stick. the result? firm centre and clean bbq stick. the caramel cheesecake was cooled down in room temperature then placed in the fridge overnight. this was served at my auntie's new year's day lunch party. it was a hit - everyone loved it. my family friends said that the taste was just perfect - not too sweet. i had to taste it and i too agreed. it was a battle baking it but it was worth waiting for!
